Technical

Taltarni’s Estate reds are renowned as some of Australia’s longest lived and most cellar-worthy; a reflection of true pedigree. The iconic Australian blend of Shiraz and Cabernet Sauvignon traditionally handled for long aging.

vintage

The start of the 2019 growing season was quite cool and very little rain fell producing ideal conditions for red varietals to fully mature in the Pyrenees. The Shiraz and Cabernet fruit was harvested from some of our oldest vines on the property, which produces fruit with ripe and intense flavours. Low yields are maintained throughout the growing season to increase concentration and showcase vineyard site-specific characteristics.

winemaking

Harvested in the cool of the morning and processed into multiple small batch open-top fermenters, the fruit was allowed to cold soak to slowly extract the varietal flavours. Allowed to naturally start ferment, the fruit was traditionally handled and submerged with French oak boards to minimise all mechanical extraction and maximise the fruit aromatics and flavours. The wine was then transferred into 40% new French oak barrels where it was allowed to age and develop. This wine is made up of the best barrels hand-selected from each fermentation batch of each varietal.

“In the Taltarni scheme of things, this Reserve Shiraz Cabernet can look forward to a long life ahead, yet even in its youth it shows its class. This is not a showy wine, but an elegant look at the classic Aussie red, albeit with a mass of beaut, concentrated flavour. Shiraz takes the lead here, all sweet blackberries, anise and plum, with a raft of woodsy spice. The palate lays out charming florals, dark chocolate and a long thread of dried herbs, all swept along by fine-cut, silky tannins.”
