Technical

The Taltarni ‘Discovery’ range of wines is comprised of some rare and some not-so-rare varietals and blends that are a little off the beaten track. These wines allow our winemakers to experiment with style, structure, taste, and artistic expression and give drinkers of these wines the opportunity of Discovery.

Growing conditions for the vines leading into the 2023 season were ideal with minimum heat and water stress.

winemaking

This limited release Rose marks a return to Taltarni’s tradition of producing crisp, European-style rose wine. The grapes were picked early in the morning and placed in the cool room for 24 hours at 5 degrees. While in the cool room, the fruit was hand plunged in the traditional manner and left on skins, allowing for lovely colour and flavours to be extracted before being transferred to the winepress. The bright pink juice was settled, racked and allowed to warm for natural fermentation to occur. Fermentation was undertaken at a lower temperature to retain fruit, and snap chilled to halt the ferment with a slight natural sweetness.
